What will I learn?
If you are interested in the Local fishing fleet and which fish are available in their prime at specific times of the year, just for fun or to broaden your professional knowledge.
The history of the local fishing fleet and its contribution to the Historic Cinque Ports of Hastings, research and discover about the sustainability of this historic natural resource. This course will run twice weekly and cover topics and techniques such as; - buying - preparing - storage - cooking in a variety of classical ways, along with preserving, marinating and curing. - designing and cooking with seafood suitable for professional menu's or at home, using only locally sourced seasonal fish.
